Prepare the marinade by mixing garlic, lime juice, orange juice, soy sauce, black pepper, cumin, oregano, and salt in a bowl.
Place beef ribs in a large dish and pour the marinade over them, ensuring they are well coated.
Cover the dish and refrigerate for at least 2 hours, preferably overnight for deeper flavor.
Preheat the grill to medium-high heat, around 400°F (200°C).
Remove the ribs from the marinade and let excess marinade drip off.
Brush the grill grates with vegetable oil to prevent sticking.
Place the ribs on the grill and cook for 5-7 minutes on each side, or until they develop a nice char.
Reduce the heat to medium and continue cooking for an additional 20-25 minutes, turning occasionally, until tender.
Remove the ribs from the grill and let them rest for 5 minutes before serving.
Chop onion, cilantro, tomato, and jalapeño for a fresh topping.
Slice avocado for serving alongside the ribs.
