Cover the beets with water.

Once boiling, cover the pressure cooker to build pressure.
Cook for 30 minutes once at pressure.
Release the pressure carefully and open the lid.
Check if the beets are tender by piercing with a fork.
If tender, remove the beets and let them cool.
Cut the ends and stalks off the beets and peel them.
Slice or prepare the beets for salad with salt, olive oil, and lemon or vinegar.
