Preheat the Ninja Foodi on sear/sauté for 5 minutes.

Add 1 cup pork fat, 1 cup onions, 1 red bell pepper (julienne), and 2 cloves garlic to the Ninja and stir-fry for 3-4 minutes until onions are see-through.

Add 1 pound of pork and 2 teaspoons of pork fat, searing until the pork is browned.

Add 1/4 teaspoon achiote dissolved in water, 1 cup beef stock, 1 teaspoon salt, 1 cup water, 1 cup Spanish olives, and 3 teaspoons capers to the pork and mix.

Set the Ninja to pressure cooker mode on high for 25 minutes.

After 25 minutes, do a quick release and shred the pork.

Mix 1 cup of precooked yellow cornmeal with the pork mixture until a smooth consistency is reached, adding more cornmeal or water as needed.

Clean plantain leaves and wrap the tamale mixture in them, tying with cooking twine.

Place a rack inside the Ninja, add 1.5 cups of water, and steam the wrapped tamales.
