Toast 30 slices of white bread on cookie sheets in the oven or under the broiler, in batches.
Let the toasted bread cool and then store it overnight in a large paper bag to dry for 24 hours.
Preheat the oven to 325°F (163°C).
Lightly grease a 9 by 13 inch baking pan.
Finely chop 1 large onion and 2 stalks of celery.
Cut the bread into croutons and add them to a large bowl.
Melt 2 tablespoons of butter in a medium saucepan over medium heat.
Add the chopped onion and celery to the melted butter and cook until soft.
Remove the cooked onion and celery from the heat.
Lightly beat 2 eggs and add them to the bowl with the bread.
Pour in 2 cups of chicken broth and stir everything to combine until moist but not mushy, adding more water if necessary.
Stir in the cooked onion and celery.
Season the mixture with 2 teaspoons of rubbed sage, 1 teaspoon of garlic powder, salt, and black pepper to taste, mixing well.
Transfer the stuffing mixture into the prepared baking dish and press it down lightly.
Bake the stuffing for about 1 hour in the preheated oven until the top is brown and crisp.
