Wash the green bananas and remove the tops and bottoms.
Make a slit down the center of each banana without cutting them in half.
Boil water in a pot and add the green bananas, 1/2 cup of olive oil, and a little salt.
Cover and boil the bananas for about 20 minutes until the skin splits and they are slightly tender.
Chop the garlic and slice the onion thinly.
In a separate pan, heat 1/2 cup of pure olive oil and sauté the garlic for a couple of minutes.
Add the sliced onions to the sautéed garlic and cook until they are still crunchy.
Add the halved olives and pimento peppers to the pan.
Pour in 4 tablespoons of white vinegar and season with salt and black pepper to taste.
Let the mixture cook for a few minutes and adjust seasoning if necessary.
