1/4 cup cashews (or any nuts)
1/4 cup sesame seeds
1 to 2 tbsp honey or maple syrup (to taste)

In a pan, add cashews & roast for 2-3 minutes on medium-low flame, stirring constantly.

Add sesame seeds & roast them with cashews on low flame until they start to puff and release aroma. Switch off the flame and add 1/2 cup desiccated coconut, mixing well. Let the mixture cool completely.

Once cooled, transfer the mixture to a grinder jar or food processor and grind in pulses until powdered. Set aside.

Roughly chop the dried apricots into smaller pieces for easier grinding.

In the same grinder jar, add the chopped apricots and blend in pulses. Once they start to break down, add the powdered coconut and nuts mixture. Blend until well mixed.

Transfer to a bowl and add honey and cinnamon (or vanilla extract). Mix well with a spatula or spoon, adjusting sweetness to taste. The mixture should have a dough-like consistency.

Scoop out 1 to 2 tbsp of the mixture and roll between your palms to form smooth balls. Roll each ball in additional desiccated coconut. Repeat for the remaining mixture.
