Peel and chop 1 kilogram of sweet potatoes.
Place sweet potatoes in a pot and cover completely with water.
Boil sweet potatoes for 45 minutes, checking for doneness with a stick.
Once cooked, remove sweet potatoes from the pot and let them cool to peel.
In a separate container, combine 800 grams of sugar and 250 milliliters of water to make a syrup.
Heat the syrup until it boils, then let it cook for 4 minutes.
In another container, mix 200 milliliters of water with 10 grams of agar agar and dissolve it, waiting for it to thicken.
Once the syrup is ready, turn off the heat and add the mashed sweet potatoes to the syrup.
Blend the mixture with a mixer until smooth and creamy.
Add 1 teaspoon of vanilla extract to the mixture and blend again.
Return the mixture to the heat and cook for an additional 3 minutes, stirring to prevent splattering.
Separate a portion of the mixture to add bitter chocolate, blending it until smooth.
Add 2 drops of lemon juice to prevent oxidation of the sweet potato mixture.
Once prepared, let the mixture cool before refrigerating.
If in a cold climate, wait 6 to 8 hours for it to solidify; in a hot climate, wait 10 to 12 hours before unmolding.
