List ingredients: bell peppers, red onions, cilantro, tomato paste, chicken bouillon cube, orange seasoning packet, and sofrito.
Wash and clean 3 medium-sized chicken breasts; cut to preference.
Add 1 tablespoon of oregano, 1 tablespoon of garlic powder, and 2 tablespoons of sofrito to the chicken; mix well.
Heat a pan on medium-high heat and add 1 tablespoon of oil; let it heat for about a minute.
Add the chicken bouillon cube to the pan and break it up.
Add the seasoned chicken breast to the pan and cook for 2-3 minutes on one side, then flip and cook for another couple of minutes.
Add 2 tablespoons of tomato paste to the chicken and mix to combine, noting that clumps are normal.
In the same bowl used for seasoning, add 1-2 cups of water to pick up remaining seasoning; add this to the pan along with chopped onions; mix everything together.
Add the orange seasoning packet and mix in for color; mention alternatives like achiote powder or oil.
Add a small bunch of cilantro to the pot and cover for 10 minutes on medium-high heat.
After 10 minutes, open the pot, mix everything, and add bell peppers of choice; cover again.
Lower the flame to low and cover the pot for 15 minutes.
Chop additional cilantro for garnish before serving.
Plate the dish and suggest serving with white rice, salad, and plantains.
