Take 1.5 lb of beef tripe out of the package and place it in a bowl.

Rinse the tripe under water.

Cut a lemon in half and squeeze it over the tripe to clean it, then rinse again.

Place the tripe in a large caldero and add 5 cups of water to cover it.

Bring the water to a boil and cover the caldero, leaving it vented.

Boil the tripe for about 2 to 3 hours until tender, checking occasionally to ensure it doesn't dry out.

After about 1 hour and 45 minutes, remove the tripe and chop it into small pieces.

Add 1.5 lb of smoked turkey drumsticks to the caldero, cutting them into smaller pieces before adding.

Add 4 chopped carrots and 2 chopped potatoes to the caldero, cutting the potatoes into large and small pieces.

Add 1.5 lb of calabaza, 1 lb of yuca, and 1/4 lb of jala to the caldero.

Add 1/2 cup of tomato sauce, 2 tsp of smoked paprika, 2 tsp of onion powder, 1.5 tbsp of salt, 1/2 tsp of coriander, 1/2 tsp of cumin, 1/2 of a jalapeno (with some seeds for heat), 1/2 tsp of black pepper, and 1 tsp of oregano to the pot.
