Drain and rinse jackfruit, then shred with a fork until it resembles pulled meat.
Heat olive oil in a skillet over medium heat, add chopped onion, and cook until translucent, about 5 minutes.
Add minced garlic, diced bell pepper, and grated carrot; sauté for 3-4 minutes until softened.
Stir in shredded jackfruit, soy sauce, smoked paprika, cumin, and black pepper; cook for 5-7 minutes until heated through.
Remove from heat and let cool slightly before mixing in nutritional yeast, flour, and breadcrumbs.
Form mixture into sausage shapes using your hands.
Preheat grill or oven to medium heat (about 375°F).
Place sausages on the grill or a baking sheet lined with parchment paper.
Cook for 10-15 minutes, turning occasionally, until golden brown and firm.
Serve hot with your choice of condiments and sides.
