Quinoa Patties

1/2 cup quinoa
1 cup water
1 large sweet potato
1/2 small head of broccoli
3 spring onions
30g fresh coriander
2 tsp paprika
1/2 tsp garlic powder
1/2 tsp chilli flakes
salt
black pepper
2-3 heaped tbsp oat flour
olive oil

Put 1/2 cup quinoa into a saucepan and add in 1 cup water.

Peel and cut 1 large sweet potato into thin chunks.

Place chunks in a steam tray (you can boil it to cook if you prefer to boil).

Steam or boil for 20 minutes.

Transfer sweet potato into a large mixing bowl.

Mash sweet potato with a musher.

Disassemble half of small head of broccoli into inflorescences.

Chop broccoli florets as finely as possible.

Transfer chopped broccoli to the mixing bowl.

Chop 3 spring onions and transfer to the bowl.

Add 30g fresh coriander to the bowl.

Add 2 tsp paprika, 1/2 tsp garlic powder, and 1/2 tsp chilli flakes.

Season with salt and black pepper to taste.

Mix all ingredients together well.

Add 2-3 heaped tbsp of oat flour and combine well.

Using your hands, form the mixture into 10 mini patties.

Heat olive oil in a frying pan over medium to high heat.

Fry patties for a few minutes on each side until golden brown.

Allow patties to cool for about 10-15 minutes to firm up.

Serve broccoli and quinoa patties with a salad and tzatziki sauce.
