Whole wheat flour offers more fiber.
Cut and shred 1 cup of idam cheese.
Add 1.5 cups of coarse yellow cornmeal, 1/3 cup of all-purpose white flour, and 1/2 teaspoon of light salt into a large bowl.
Mix the dry ingredients with a spoon.
Add 1 tablespoon of margarine made with olive oil and cut it into the cornmeal mixture using a dough blender.
Slowly pour in 1 cup of warm skim milk and stir until well blended.
Let the mixture stand for at least 3 minutes to thicken.
Heat oil in a 12-inch skillet to 365 degrees Fahrenheit.
Scoop the cornmeal batter with a medium-sized serving spoon, smoothing the top and sides with your hands before placing it into the skillet.
Fry the cornmeal fritters until golden brown on one side, about 4 minutes.
Turn the fritters to the other side and continue frying until golden brown, about 3 minutes more.
Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb excess oil.
