Paleo Chocolate Cake

3 Tbsp Cocoa Powder (Sifted)
1/2 TSP Baking Powder (Sifted)
1/2 Vanilla Essence
Fresh Milk 1/3 Cup
250ml Whipped Cream /Non-dairy Cream
1/3 Cup Powdered Sugar
1/4 TSP Coconut Essence
1/2 Dry Desiccated Coconut
100g Dark Chocolate
1/2 Cup Whipped Cream /All Purpose Cream
1 TSP Melted Butter

Preheat the vessel to 180C.

Grease a 7 inch cake tin with oil and line with butter paper.

In a bowl, combine 2 eggs, 1/2 cup powdered sugar, 1/2 cup sifted plain flour, 3 tbsp sifted cocoa powder, and 1/2 tsp sifted baking powder. Mix well.

Add 1/2 tsp vanilla essence to the mixture and combine until smooth.

Pour the batter into the prepared cake tin.

Bake in the preheated vessel for 14-16 minutes.

Once baked, soak the cake with 1/3 cup fresh milk.

For the cream layer, whip 250ml of whipped cream or non-dairy cream and mix with 1/3 cup powdered sugar, 1/4 tsp coconut essence, and 1/2 cup dry desiccated coconut.

Spread the cream layer over the cooled cake.

For the chocolate ganache, melt 100g dark chocolate with 1/2 cup whipped cream or all-purpose cream and 1 tsp melted butter. Mix until smooth and pour over the cake.
