2 cups water
1 medium onion
3 cloves garlic
2 cups fresh spinach
1/4 cup fresh basil
1 tablespoon rice vinegar
cherry tomatoes
3/4 to 1 cup feta cheese
salt

Rinse 1 cup of quinoa under cold water.

Add quinoa to a saucepan with 2 cups of water and a little salt.

Add dried thyme, oregano, and basil to the saucepan.

Turn heat to high and bring to a boil, then cover and reduce to low heat to simmer for 15 minutes.

In a skillet, heat olive oil and add chopped onion (1 medium onion).

Saute onions until translucent, about 15 minutes.

Add 3 cloves of minced garlic to the onions, reserving some for later.

After 15 minutes, check quinoa; it should have absorbed the water.

Add 2 cups of chopped fresh spinach to the hot quinoa to wilt it.

Add 1/4 cup of fresh basil to the quinoa and spinach mixture.

Add the sauteed onions to the quinoa mixture and let it cool for 5-10 minutes.

Once cooled, add 1 tablespoon of rice vinegar, salt, and reserved raw garlic to the mixture.

Add halved cherry tomatoes to the salad.

Add 3/4 to 1 cup of feta cheese to the salad.

Stir everything together and serve.
