4 cups cooked quinoa
15.5 ounces garbanzo beans (1 can), drained and rinsed
¾ cup English cucumber, finely diced (¼ inch dice)
1 cup grape tomatoes (¼ inch dice)
1 ½ tablespoons green onions (thinly sliced)
¼ cup fresh Italian parsley, chopped
¼ cup fresh basil, chopped
2 tablespoons fresh mint, chopped
¼ teaspoon kosher salt (or to taste)
⅛ teaspoon ground black pepper (or to taste)
⅓ cup Lively Lemon Vinaigrette (or to taste)
10 ounces mixed greens
1 pinch kosher salt
1 pinch ground black pepper
¼ cup Lively Lemon Vinaigrette (or to taste)
Lemon wedges
Sliced avocado (optional garnish)

Prepare 1 cup uncooked quinoa, fluff with a fork, and set aside to cool completely. You will need 4 cups of cooked quinoa for this recipe. Make Lively Lemon Vinaigrette and set aside.

Using a fine mesh strainer, drain and rinse garbanzo beans. Finely dice cucumber and cut grape tomatoes. Thinly slice green onions. Chop parsley, basil, and mint, and set each ingredient aside.

Add garbanzo beans, cucumber, tomatoes, and green onion to a mixing bowl. Sprinkle with kosher salt and pepper, and mix to combine. Add 4 cups cooked quinoa, and mix again. Add chopped parsley, basil, and mint, and mix to combine. Pour vinaigrette over the quinoa mixture, and mix to combine. Taste for seasoning, and adjust if needed. Cover and refrigerate for 30 minutes (up to 2 hours).

When ready to serve, add mixed greens, kosher salt, and pepper to another mixing bowl. Pour reserved vinaigrette onto greens and toss to coat.

Serve mixed greens on each plate as a bed for the quinoa. Toss the quinoa once more, and serve a large scoop onto the bed of lettuce on each plate. Garnish with a wedge of lemon and sliced avocado (optional).
