1 cup red onion
0.5 cup kalamata olives
0.5 cup marinated artichoke hearts
0.5 cup curly leaf parsley
0.25-0.33 cup extra virgin olive oil
fresh ground black pepper
fresh dill (to taste)

In a saucepan, combine rinsed quinoa with about 1.75 cups water and a pinch of salt or bouillon.

Chop cucumber, cherry tomatoes (quarter and remove seeds), yellow bell pepper, red onion, and marinated artichoke hearts.

Add chopped cucumber, tomatoes, yellow bell pepper, red onion, kalamata olives, and artichoke hearts to a large bowl.
