Chop up half an onion.

Chop up some tomatoes.

Add beef to a pot and season with salt.

Sear the beef in beef tallow (or olive oil if preferred).

Add chopped onion, tomatoes, and garlic to the pot.

Season with salt and pepper, and add tomato paste.

De-seed the guajillo, ancho, and arbol peppers and add them to the pot.

Add water to the pot and let it boil until soft.

Blend the mixture until smooth.

Add the meat back into the pot along with beef stock, more water, rosemary, bay leaves, and other seasonings.

Let it cook for 3 to 4 hours until tender.

Dip corn tortillas in the consommé sauce.

Add cheese, cilantro, and onion on top of the tortillas.

Add the beef on top and drizzle more sauce over it.

Let it cook until crispy.
