Grilled Pineapple

Preheat the grill to medium-high heat.

Cut the top (crown) off the pineapple.

Slice the bottom off the pineapple to make it sturdy.

Cut away the outer peel from top to bottom, following the contour of the pineapple.

Remove any remaining eyes from the pineapple with a paring knife.

Halve the pineapple by cutting it down the center.

Halve those halves to create quarters.

Remove the fibrous core from each quarter.

Halve each section again to get eight pineapple spears.

For a sweet coating, combine 1/2 cup of brown sugar and 1 teaspoon of cinnamon in a shallow dish and mix.

Press the pineapple spears into the brown sugar mixture and place them on a cookie sheet or plate.

For a spicy coating, combine 1/2 cup of brown sugar and 1-2 teaspoons of cayenne pepper in a bowl and mix.

Coat the pineapple spears with the spicy mixture in the same way as the sweet coating.

Rub a napkin with vegetable oil on the grill grates to prevent sticking.

Place the uncoated or coated pineapple spears directly on the grill.

Grill the spears for about 2-3 minutes per side until browned and caramelized.
