Grilled Pineapple Tequila

1 ripe pineapple
1/4 cup dark brown sugar
1/4 cup lime juice
1/2 cup tequila
2 chipotle peppers, minced
1/4 cup mint leaves, chopped
1/4 cup cilantro, chopped

Chop up the pineapple, removing the skin and core.

Rub each pineapple slice down with dark brown sugar.

Grill the pineapple slices for 3 to 6 minutes on each side.

Zest a lime once the pineapple is cooled.

Chop the grilled pineapple into chunks.

In a half-gallon jar, combine the pineapple chunks and lime zest.

Pour in the tequila and shake well.

Let the mixture infuse for 6 days.

On day six, strain out the pineapple and lime into a clean glass jar using a fine strainer.

De-seed the chipotle peppers (optional) and chop them up.
