Cut green cabbage into thin strips and wash thoroughly.
Cut onions into strips.
Julienne the carrots.
Slice red bell pepper into thin strips, removing the ribs.
Remove seeds and stems from Fresno chiles and slice them.
In a large pot, combine vinegar and turmeric, and bring to a boil over high heat.
Add sugar to the boiling vinegar and stir until dissolved.
Add all prepared vegetables to the pot and stir to ensure they are coated in the vinegar.
Bring back to a boil, cover, and cook for 2 minutes.
Remove vegetables with a spider and drain excess liquid into a bowl.
Pack the vegetables tightly into Ball jars.
Strain the remaining liquid through cheesecloth to remove impurities.
Pour the strained liquid over the packed vegetables until covered.
Seal jars tightly and refrigerate for at least 2 days before consuming.
