Whole wheat flour adds fiber and nutrients.
Start with the preparation of the shortbread pastry.
Rub the flour, powdered sugar, and cold diced butter together until the butter is in small pieces.
Add 1 whole egg to the mixture.
If the dough is sticky, sprinkle it with a little flour, but don't add too much to prevent the dough from becoming hard.
Divide the dough into two parts: one large and one small.
Place the large part in the bottom of a springform pan.
Dust your hands with flour before handling the dough.
Put both parts of the dough in the freezer for 10-15 minutes or in the fridge for at least half an hour to chill well.
Prick the cooled crust with a fork and sprinkle with breadcrumbs.
Combine the apple mousse with potato starch.
Cook a thick pudding using pineapple juice until it thickens nicely.
Place the mousse on the crust and squeeze in the pineapple pieces (you will not use the entire can).
Pour hot pineapple pudding over the mousse.
Crumble the smaller part of the dough over the top; the crumbs should be large and thick.
Bake at 200 degrees Celsius for about 40 minutes.
If the cake browns too quickly from the top, cover it with baking paper.
Do not cut when hot or warm; it needs to cool completely before slicing or it will fall apart.
