Boil water in a large pot.
If the crab is alive, place it in warm water; if dead, place it in hot boiling water.
For 500 grams to 1 kilo of crab, boil for 17 minutes; for 1 to 1.6 kilos, boil for 20 minutes; for 1.6 to 2.5 kilos, boil for 25 minutes.
Add 70 grams of salt per liter of water; for 3 liters, use 210 grams of salt.
Remove the crab from the pot and let it cool slightly.
Remove the flap of the crab to check if it's female and then clean out the insides.
Remove the gills, mouth, and antennae from the crab.
Remove membranes around the crab's body using a fork or spoon.
Cut the crab in half and remove the legs carefully.
Mix the crab with white wine and serve on a plate.
