Use a Swedish cookie press or roll the dough into tiny rolls and press a cherry on top.
Separate the egg white from the yolk, discarding the yolk.
Slice the almond paste into smaller pieces for easier mixing.
Mix the almond paste and egg white together, either by hand or using a mixer.
Gradually add the powdered sugar to the mixture, mixing well after each addition.
Fill the cookie press with the dough, ensuring there is no air in it if using a pastry bag.
Squeeze the dough onto a baking sheet lined with parchment paper, forming cookies.
Press a Maraschino cherry on top of each cookie.
Preheat the oven to 350°F (175°C).
Bake the cookies on the middle shelf for about 15 minutes.
Check the cookies and move them to a higher shelf to brown the tops for an additional 5 minutes.
Remove the cookies from the oven after a total of 20 minutes, ensuring they are still soft inside.
