Parmesan is more widely available and less expensive.

Prepare the tomatoes by removing the stems, blanching them in boiling water for about 30 seconds, then cooling them in cold water to peel and chop into 2 cm pieces.

Mince garlic, red pepper flakes, and parsley leaves.

In a pot, heat olive oil with minced garlic and red pepper flakes over low heat.

Add half of the minced parsley leaves and sauté briefly.

Add the chopped tomatoes and whole tomatoes, and simmer until the sauce thickens slightly.

Boil 3 liters of water, add 2 tablespoons of coarse salt, and once boiling, add the spaghetti to cook.

Add salt and the remaining parsley leaves to the cooked pasta, and toss to combine.

Add a little reserved pasta water to achieve a creamy consistency, mixing until well combined.
