Hold the chicken by the neck and dip it in hot water three times to distribute heat evenly.
Place the chicken inside the pot, turn the heat to the lowest setting, and add scallions and ginger.
Poach the chicken for about 45 minutes until fully cooked (internal temperature of at least 165°F or 74°C).
Remove the chicken and serve immediately with the sauce.
