Make hot honey by adding 1 cup of honey to a small saucepan over low to medium heat for 1 to 2 minutes until it loosens up.

Turn off the heat and stir in 2 tablespoons of hot sauce and 2 teaspoons of crushed chili flakes until well combined.

Preheat the grill to medium-high heat, aiming for about 375°F (190°C) or preheat a smoker to about 450°F (232°C).

In a small bowl, mix together the chicken thighs with 2 tablespoons of olive oil, 1 teaspoon of salt, 1/2 teaspoon of pepper, 1 teaspoon of garlic powder, and 1 teaspoon of paprika.

Place the chicken thighs skin side up on the grill and grill for about 10 minutes.

Flip the chicken thighs over and continue grilling for another 5 to 15 minutes, flipping occasionally, until the internal temperature reaches 185°F (85°C).

If using an offset smoker, flipping is not necessary and there’s no need to worry about flare-ups.

If using a normal grill, keep an eye on it to avoid flare-ups; move chicken to a cooler part of the grill if they occur.
