Coconut oil adds a subtle flavor, while canola oil is more budget-friendly.
Start by turning on the burner for the skillet and heating it up.
Use coconut oil for frying the plantains, pouring in enough to cover the bottom of the skillet.
Slice off both ends of the ripe plantain and peel it like a banana.
Cut the plantain into thick planks, aiming for about six slices total.
Once the oil is heated, add the sliced plantains to the skillet, making sure not to overcrowd them.
Sprinkle some cinnamon on half of the plantains and add a little jalapeno to the other half for a bit of heat.
Cook the plantains, adjusting the heat as necessary, until they start to get color, flipping them as needed.
Check the color and texture of the plantains, cooking them to your desired level of doneness, whether that's soft or a bit firmer.
Once cooked, remove the plantains from the skillet and drain them on paper towels.
Sprinkle with salt to taste before serving.
