Servings4
2 pounds beans
oil
sofrito
4 pieces of punking
1 teaspoon sugar
1 teaspoon white vinegar
1 teaspoon oregano
salt
1

Pre-cook 2 pounds of beans in a pot of water until they are three-quarters done, about 45 minutes to an hour.

2

Pack the pre-cooked beans into containers for freezing.

3

In a pan, heat a little oil and add the ingredients (including sofrito) to sauté.

4

If using only sofrito, ensure it contains garlic and cilantro, and use more of it than the original amount.

5

Peel and cut 4 pieces of punking, add to the sautéed ingredients, and mix.

6

Take the frozen beans out of the freezer and add them to the same pot with one more cup of water, letting it boil.

7

Once the beans defrost, let them boil for an additional 5 minutes to combine flavors.

8

Remove any larger seasonings from the beans for texture preference.

9

Blend the removed seasonings with a little of the bean liquid and add back to the beans.

10

Add 1 teaspoon of sugar, 1 teaspoon of white vinegar, and 1 teaspoon of oregano to the beans and adjust salt as needed.

11

Let the beans boil until they reach a thicker consistency.
