Spicy Fried Plantains, known as Dodo in Nigeria, is a beloved side dish that complements many meals. Traditionally served alongside rice or stews, they are cherished for their sweet and spicy flavor profile. The dish highlights the versatility of plantains, which are a staple in West African cuisine, and has gained popularity beyond its origins, often enjoyed in various forms worldwide.

Smoked paprika adds flavor without the heat.

Coconut oil provides a unique flavor.
Wash the plantains before cutting and peeling them.
Peel the plantains and slice them into any size of your choice.
Transfer the sliced plantains into a mixing bowl.
Season the plantains with a pinch of salt, black pepper powder, and dried rosemary.
Mix the plantains with a spatula to ensure they are evenly coated.
Optionally add a pinch of chili powder for spice and mix again.
Place a nonstick pan on the heat and add enough vegetable oil to fry the plantains.
Let the oil heat up, then start dropping the plantains into the hot oil.
Fry the plantains on medium heat until they turn golden brown, flipping to fry the other side.
Once done frying, take the plantains off the heat and place them on a kitchen napkin to drain excess oil.
Repeat the frying process with the next batch of plantains until all are cooked.
