Falafel Tikki

1 teaspoon salt

1/4 cup finely chopped coriander
1/2 cup besan (gram flour)
1/4 cup cornflour
1 teaspoon roasted cumin powder
1 teaspoon amchur powder
1 teaspoon garam masala
1/2 teaspoon black pepper powder

Soak chickpeas in water for 4 to 5 hours until they swell.

Drain the excess water from the soaked chickpeas.

Grind the chickpeas in a small mixer bowl with a teaspoon of salt in 2 to 3 batches, avoiding excess water.

Transfer the ground chickpeas to a bowl.

Add 1/2 cup finely chopped onion, 1/2 cup finely chopped capsicum, and 1/2 cup finely chopped coriander to the bowl.

Add 1/2 cup besan and 2 tablespoons cornflour for binding.

Mix in 1/2 teaspoon roasted cumin powder, 1/2 teaspoon amchur powder, 1/4 teaspoon garam masala powder, and 1/4 teaspoon black pepper powder.

Mix everything well by hand, adjusting with more besan if the mixture is too wet.

Wet your hands slightly to prevent sticking, then take a portion of the mixture and flatten it into a tikki shape.

Repeat to form all tikkis and place them on a plate.

Heat oil in a pan for frying the tikkis.

Fry the tikkis in batches, ensuring the flame is medium, and do not flip them for the first 30-40 seconds after adding them to the oil.

Once one side is golden brown, flip the tikkis to fry the other side until golden brown and crispy.

Remove the tikkis from the oil and drain on paper towels.

Serve the falafel tikkis with green chutney and tomato sauce.
