Venezuelan Christmas Rum Cake

1 cup whole wheat flour
1/3 cup jaggery
1/4 cup vegetable oil
1/4 tsp baking soda
1/2 tsp baking powder
5-6 tbsp dry fruit mix (coarsely crushed)
40 ml orange juice
20 ml rum
1/4 tsp clove powder
1/2 tsp dry ginger powder
1/2 tsp cinnamon powder
1 tbsp vanilla essence

In a mixing bowl, add all the chopped dry fruits of your choice and then add rum and orange juice. Mix all things nicely. Soak it at least overnight.

In a pan, add jaggery and water and heat it. When jaggery is completely melted, switch off the flame and let it cool down completely.

In a mixing bowl, sieve all the dry ingredients.

Take the jaggery mixture, add oil in it along with the flour mixture and soaked dry fruit mixture. Mix all things nicely.

Line up the cake pan and pour the mixture into the cake pan. Decorate the cake with some more dry fruits on top.

Bake at 180 degrees Celsius for 45-50 minutes, or if baking on a gas top, bake on low to medium flame for at least 50-55 minutes.

Once baked, cover the cake with a cotton towel and let it cool completely.

After cooling, take it out from the cake tin, sprinkle a little icing sugar on it, cut into slices, and enjoy.
