To make the Poolish, mix 7g dry yeast, 1 cup flour (160g), and 1 cup milk (250g) with a fork until the consistency is fluid.

Add 15g brown sugar (1 tablespoon) to the Poolish and cover it, waiting for 4 hours at ambient temperature.

After 4 hours, check that the volume of the Poolish has doubled or tripled.

Add 2 cups flour (320g) to the Poolish.

Add 1 teaspoon salt (6g) to the mixture, ensuring it is added last to not kill the yeast.

Add 1 egg and mix the preparation until the dough is not sticky.

If the dough is sticky, add more flour as needed.

Cut 50g unsalted butter (4 tablespoons) into 6 pieces and add it step by step to the dough.

Once the dough is ready, place it in a Tupperware and refrigerate for 6 hours for cold fermentation.
