Prep an 8x8 baking dish by lining it with parchment paper, trimming the corners for a perfect fit.
Melt 1 cup of unsalted butter in the microwave in short bursts, mixing in between to prevent it from exploding.
Crack 3 eggs into a bowl to check for shells before adding them to the batter.
In a large bowl, combine the melted butter, 1 tablespoon of coffee, 1 tablespoon of vanilla extract, 1 cup of granulated sugar, and 200 grams of light brown sugar; whisk until smooth.
Add the eggs to the mixture and whisk until well combined.
Sift in 120 grams of flour, 3/4 cup of cocoa powder, and 1 teaspoon of salt; mix until almost combined, being careful not to make a mess.
Switch to a spatula and fold the mixture until fully combined, ensuring no lumps of butter remain.
Fold in chocolate chips and, if desired, 1 cup of toasted nuts.
Pour the batter into the prepared baking dish, spreading it evenly and pushing it towards the edges.
Bake in a preheated oven at 350°F for about 30 minutes, checking that the center is just set.
Allow the brownies to cool in the pan until solid, then lift them out using the parchment paper and cut into squares.
