4 cloves garlic (finely chopped)
2 tablespoons fresh thyme
1.5 teaspoons fresh ginger
sweet peppers (yellow, green, and red)
1 small Irish potato (cut medium)
1 medium carrot (cut)
1 small tomato
1 onion (cut)
2 teaspoons pimento seed (allspice, crushed)
1 tablespoon tomato ketchup
2 tablespoons all-purpose seasoning
1 tablespoon jerk powder seasoning
1 teaspoon paprika
0.5 teaspoon black pepper
1 teaspoon scotch bonnet pepper
3 tablespoons vegetable oil
5 cups water

Wash and clean chicken in lemon juice, leaving the skin on.

In a bowl, combine chicken with scallion, garlic, thyme, ginger, potato, carrot, tomato, sweet peppers, pimento seed, ketchup, all-purpose seasoning, jerk powder, paprika, black pepper, and scotch bonnet pepper; massage seasoning into chicken.

Heat 3 tablespoons of oil in a pot over medium heat.

Add seasoned chicken to the pot and fry for 3-4 minutes on each side until browned; remove and set aside.

In the same pot, add onion, scallion, carrot, and potato; sauté for 1 minute.

Add 1 tablespoon of ketchup and remaining seasoning; mix well.

Pour in 5 cups of water from a kettle and add a drop of browning; mix.

Bring to a boil for 5 minutes.

Add the browned chicken back into the pot; cover and cook for 25-30 minutes, checking occasionally.

After 20 minutes, check the chicken and allow to cook for an additional 5-10 minutes until done.
