Welcome to my channel, today I'm making chicharrones en salsa.

Using a bag of pork cracklins, which is fried pork fat.

I'll use an 8 ounce can of tomato sauce and about a cup of water.

Chop up half an onion, 2 roma tomatoes, and 2 cloves of garlic.

Using jalapeno slices, I would prefer serrano peppers but I'm using what I have.

Chop the tomatoes, onions, and garlic and put them together in a skillet.

Heat a cast-iron skillet on high to get it nice and hot, then turn down to medium.

Add about a tablespoon of vegetable oil to the skillet, it's hot when it bubbles.

Add the chopped onions and cook until translucent and slightly brown, about 3-4 minutes.

Add the chopped tomatoes and stir them around for about a minute.

After a minute, add the chopped garlic, which has been seasoned with salt and pepper, and cook for another minute.

Add the jalapeno slices, about half a bag, and mix it in.

Pour in the tomato sauce and then fill the empty can with water, adding that to the skillet as well.

Stir to coat everything with the tomato sauce and water, then cover and let it cook on low to medium heat.

Let the chicharrones absorb the flavors and soften for about 5 minutes.

After 5 minutes, uncover and stir, keeping an eye on the sauce and how much you want them to absorb.

The chicharrones should be pliable and a little chewy, absorbing all the flavors from the tomato, onions, garlic, and jalapeno.

Serve the chicharrones alone or with scrambled eggs or on tortillas.
