120 mL sweet marsala or another sweet wine

Whip 350 mL of heavy cream and put it away in the refrigerator.

Combine 5 egg yolks, 120 g of sugar, and 120 mL of sweet marsala in a bowl set over simmering water.

Heat the mixture while whisking constantly until it reaches 65 to 75ยฐC.

Remove from heat and whisk on high speed with a whip attachment until cool.

Gradually fold the egg yolk mixture into 350 g of mascarpone.

Gently fold in 1/3 of the reserved whipped cream, then fold in the remaining whipped cream.

Spread onto prepared pastries or containers and refrigerate until set.
