In a stand mixer, add flour, sugar, salt, and yeast.
Mix dry ingredients together separately to combine.
In a separate jug, measure out milk, water, and butter; heat in the microwave until butter melts and it's blood temperature.
Add vanilla extract into the liquid mixture.
Turn on the stand mixer to low and add the liquid mixture; mix for 2 minutes to activate the yeast.
Increase speed to medium and knead for 6-8 minutes until the dough cleans the bottom of the bowl.
Turn the dough out onto a floured surface and scrape the bowl clean.
Pour a little flavorless oil into the bowl to help the dough rise and place the dough back in the bowl.
Cover the dough tightly with cling film and lay a tea towel over the top; let rise for 2 hours.
After 2 hours, turn the dough out onto a floured surface and roll it out to around 1/2 inch thick.
Cut out donuts using a regular cutter and a piping tip for the holes; place on a baking tray with space in between.
Proof the donuts for around 30 minutes until they are rounded and the cutter lines are no longer visible.
Brush the tops of the donuts with melted butter before baking.
Sprinkle the baking tray with water to create steam while baking.
Bake the donuts in the oven until done; check for doneness visually.
In a large bowl, whisk together icing sugar, vanilla extract, and enough water to create a thin icing for glazing.
Glaze the donuts straight away after they come out of the oven; double dip them for extra glaze if desired.
Dip warm donut holes in butter and toss in sugar and pumpkin pie spice.
Fill stuffed donuts with Nutella using a piping bag and swirl on top.
