Soak the black rice in water for at least 4 hours or overnight.

Bring the water to a boil, then reduce to a simmer and cover the pot.
Cook the rice for about 30-40 minutes until tender and water is absorbed.
In a separate pot, combine coconut milk, sugar, and pandan leaves over low heat.
Stir the coconut mixture until the sugar dissolves; do not boil.
Remove the pandan leaves from the coconut mixture once fragrant.
Mix the cooked black rice with the sweetened coconut milk until well combined.
Transfer the mixture to a serving dish lined with banana leaves.
Let it cool to room temperature, then refrigerate for at least 2 hours before serving.
