1

In a heavy bottom pot, add 2 cups of white granulated sugar.

2

Add 1/2 cup of corn starch to the sugar and whisk until well combined.

3

Add 1/4 teaspoon of salt and whisk again.

4

In a separate container, add 8 egg yolks and whisk in all of the evaporated milk until well combined.

5

Add 1 cup of eggnog to the egg yolk mixture and combine.

6

Gradually add the egg yolk mixture to the sugar and corn starch mixture, whisking until smooth and removing any lumps.

7

Ensure all ingredients are at room temperature before proceeding.

8

On medium heat, add 2 cups of heavy cream to the pot.

9

Cook the mixture for 10 to 15 minutes, whisking constantly to avoid lumps and skin formation.

10

Once thickened, turn off the heat and add a couple tablespoons of softened butter and 1 tablespoon of vanilla extract, whisking until combined.

11

If using, add the banana elixir and mix well.

12

Cover the pudding with plastic wrap, ensuring it touches the surface to prevent a skin from forming, and refrigerate overnight.

13

After chilling, use a mixer to whip the pudding until smooth again.

14

To assemble, add a thin layer of pudding to the bottom of a 9x13 deep aluminum foil pan.

15

Add a layer of traditional vanilla wafer cookies on top of the pudding layer.

16

Slice and add about 7 bananas on top of the cookies.

17

Add a layer of crushed vanilla wafer cookies on top of the bananas.

18

Spread the remaining pudding over the crushed cookies.

19

Decorate the top with remaining vanilla wafers.

20

Optionally, add whipped cream on top if desired.
