Clean inside the clams under running water

Finely chop the ginger, garlic and chilli

Thinly slice the onion and roughly chop coriander

Heat 2 Tbsp oil in the wok

Add the peppercorn, chilli, garlic and ginger, fry for half of a minute

Add the onion, stir fry for a minute

Add the razor clams and stir

Add the cooking wine, soy sauce, sugar and stir

Cover the wok and cook for 2 to 3 minutes

Remove the cover, add coriander and stir

Transfer to a dish and serve hot
