Heat vegetable oil in a deep skillet over medium-high heat until shimmering.
Carefully add chimichangas to the hot oil, frying until golden brown, about 3-4 minutes per side.
Remove from oil and drain on paper towels.
Serve hot with sour cream, guacamole, lettuce, and tomato.
