Preheat the oven.

In a third bowl, combine the breadcrumbs, garlic, herbs, paprika, and grated Parmesan.
Dip each cauliflower floret first in the flour mixture, then in the egg, and finally coat with the breadcrumb mixture.
Place the coated cauliflower on a baking sheet and drizzle with vegetable oil.
Bake in the oven until golden and crispy.
For the dip, mix the crème fraîche, yogurt, chopped chives, lemon juice, salt, and pepper together.
