Cut the plantain in the center and peel it off.
Cut the plantain into diagonal chunks.
Brush the plantain pieces with olive oil or coat them one piece at a time.
Place the coated plantain pieces on a baking tray.
Bake the plantains on the top rack at 450°F for about 15 minutes.
After 14 minutes, pull the tray out and turn the plantains over.
Add a drop of olive oil on each piece if needed to prevent sticking.
Return the tray to the bottom rack and bake for an additional 10 minutes.
Remove the baked plantains from the oven; they should look beautiful and be ready to serve.
