Wash the kale thoroughly under cold water.
Remove the tough stems from the kale leaves and chop the leaves into bite-sized pieces.
Heat olive oil in a large skillet over medium heat until shimmering.
Add minced garlic and sauté until fragrant, about 30 seconds.
Add chopped onion and cook until translucent, about 3-4 minutes.
Add the kale to the skillet and stir to coat with the oil and garlic.
Pour in vegetable broth and cover the skillet to steam the kale for 3-5 minutes.
Remove the lid and stir the kale, cooking until wilted and tender, about 2-3 minutes more.
Season with salt, black pepper, and red pepper flakes to taste.
Drizzle with lemon juice before serving.
