Chania Style Bougatsa hails from the picturesque town of Chania in Crete, Greece. This delightful pastry is traditionally filled with a creamy custard made from semolina and eggs, encased in crispy layers of phyllo dough. Servings4
8.8 ounces or 250 grams of Greek Mizithra cheese
6 phyllo sheets
½ cup or 125 ml of milk
5 tablespoons or 70 grams of flour
5 tablespoons or 7.5cl of corn oil for the mixture
3 tablespoons or 5cl of corn oil for greasing the phyllo dough and baking tray
2 tablespoons or 25 grams of sugar

heavy cream

🥗Healthier: Greek yogurt

💰Cheaper: milk + cornstarch

Greek yogurt reduces calories while maintaining creaminess

phyllo dough

🥗Healthier: whole wheat phyllo

💰Cheaper: homemade pastry dough

Whole wheat adds fiber and nutrients, while homemade can be more economical.

1

Place the cheese into a mixing bowl.

2

Add the five tablespoons of flour.

3

Pour the milk into the bowl.

4

Mix well until the flour is well incorporated into the cheese.

5

Add the corn oil and mix again.

6

Count six phyllo sheets and place them on a flat surface.

7

Fold one half of phyllo and make a square.

8

Carefully slice the left sheets and put aside.

9

Using a pastry brush, lightly brush one phyllo sheet.

10

Then brush the second phyllo sheet.

11

Once all three sheets have been brushed, pour the mixture into the center of the phyllo sheets and spread gently.

12

Fold one corner of the phyllo sheets and then fold the opposite corner to meet in the middle.

13

Repeat for the other sides and you should have a square - like a square envelope.

14

Gently tap the envelope to seal it.

15

For the next three sheets, oil each one as before and place all three on each other.

16

Gently take the cheese filled envelope and place it on opposite ends of the phyllo sheets.

17

Brush with a little oil and fold again to make a slightly thicker square envelope.

18

Brush again with a little oil using a pastry brush.

19

Flip it around and place it on an oiled baking tray.

20

Brush a little oil and place in preheated oven.
