Heat sunflower oil in a cast iron skillet over above medium heat.
Add beef pieces to the skillet and brown for about 4-5 minutes on each side, seasoning with salt and black pepper while cooking.
Remove the beef from the skillet and set aside.
In the same skillet, add chunky carrots, sliced onion, and 2 tablespoons of chopped garlic.
Add green olives, dried thyme, and oregano to the vegetables.
Crush two cans of whole tomatoes by hand and add them to the skillet.
Pour in chicken stock to the skillet, enough to cover the ingredients.
Preheat the oven to 230°C (about 446°F).
Transfer the skillet to the oven and cover with a lid, cooking for 90 minutes to 1 hour and 45 minutes until everything is tender.
Remove from the oven and check the tenderness of the beef.
