1 lb Firm Tofu
8 oz Pad Thai Rice Noodles
2 tablespoons GrapeSeed oil
1 medium white onion
3 cloves Garlic
1 cup Shredded Carrots
1/2 cup Shredded Peanuts
2 Medjool Dates, pitted
3 tablespoons Tamari Sauce
2 tablespoons Sesame Oil
2 tablespoons Rice Vinegar
1 tablespoon Miso Paste
2 tablespoons Fresh Lime Juice
1 tablespoon Mushroom Sauce
1/4 cup Water
1/2 cup Peanut Butter

Soak Pad Thai rice noodles in warm water for 30 minutes until softened.

Drain noodles and set aside.

Press Firm Tofu to remove excess moisture, then cut into cubes.

Heat GrapeSeed oil and Sesame Oil in a large skillet over medium heat until shimmering.

Add tofu and cook until golden brown on all sides, about 8-10 minutes.

Add minced Garlic and cook until fragrant, about 1 minute.

Stir in the soaked noodles, Peanut Butter, Tamari Sauce, Fresh Lime Juice, and Miso Paste.

Toss everything together until noodles are well coated and heated through, about 3-5 minutes.

Add Shredded Carrots and cook until just tender, about 2-3 minutes.

Remove from heat and fold in Shredded Peanuts and white onion.
