Put 1 pound of stew meat in the bottom of the Instant Pot.
Chop 1 whole onion and add it to the pot.
Add 2 beef bouillon cubes to the pot.
Pour in 1/2 cup of liquid (water, chicken broth, or beef broth).
Add a 4 ounce can of green chilies.
Sprinkle in 1 teaspoon of cumin and 1/2 teaspoon of oregano.
Add 1 cup to 1.5 cups of your favorite enchilada sauce.
Mix the ingredients together a little bit.
Put the lid on the Instant Pot and turn the knob to sealing.
Press the pressure cook button and set it for 25 minutes.
When there are about 10 minutes left, start preparing the burritos.
Grab some refried beans and add 2 to 3 spoonfuls to each tortilla, spreading it around.
Add a little bit of cheese on top of the refried beans.
When the timer beeps, push the knob to quick release and remove the lid once the pressure is out.
Use a slotted spoon to grab the cooked meat and place it on top of the cheese on the tortilla.
Fill the tortillas with the meat, aiming to fill six burritos.
Fold in the sides of the tortilla and roll it up, placing it seam side down in a large cooking pan.
Take the sauce from the Instant Pot and pour it on top of the burritos.
Add cheese on top, using about a cup of Colby jack cheese and some mozzarella if needed.
Preheat the oven to broil and broil the burritos for about 2 to 3 minutes, watching closely to prevent burning.
Garnish with parsley for color if desired.
