Green Chile Carne Con Papas

5 tomatillos
2 Roma tomatoes
1 jalapeno
1/4 piece of onion
2 garlic cloves
1.5 lb bottom round steak
cumin
garlic salt
black pepper
2 Chayote potatoes
3 diced green chilies
1 cup water
chicken bouillon
oregano
small handful of cilantro

Peel the husks off of 5 tomatillos and wash them well to remove any sticky residue.

Roast 2 Roma tomatoes, 5 tomatillos, 1 jalapeno, 1/4 piece of onion, and 2 garlic cloves on all sides.

In a large pan over medium heat, add 1.5 lb of bottom round steak cut into small pieces.

Season the steak with cumin, garlic salt, and black pepper.

Cook the beef for 8 minutes or until fully cooked through.

Once the ingredients are roasted, place them into a blender.

Pour in 1 cup of water and season with chicken bouillon and oregano.

Add a small handful of cilantro and blend the sauce well, then set it aside.

Once the beef is fully cooked, add in 2 Chayote potatoes and 3 diced green chilies.

Stir the potatoes and chilies in with the beef for a minute.

Pour in the blended sauce and give everything a good mix to combine.

Cover with a lid and allow to simmer over medium-low heat for 15 minutes.

After 15 minutes, check that the potatoes are fork tender and serve.
