1

Pour buttermilk into a large bowl.

2

Add baking soda and mix it well.

3

Add salt and sugar.

4

Add one egg and whisk it thoroughly.

5

Pour in vegetable oil (sunflower oil can be used).

6

Sieve the flour and add half of it into the mixture, whisk gently, then add the other half to make a soft dough.

7

Turn the dough out onto a lightly floured surface and knead gently.

8

Form the dough into a ball and divide it into four equal parts.

9

Cover the divided dough with plastic wrap and set aside to rest.

10

For the filling, mix great mozzarella cheese with one egg, fresh chopped green onion, dill, cilantro, salt, and pepper to taste.

11

Roll out each piece of dough, divide the filling into four parts, and add it into each dough piece.

12

Wrap the filling and gently press to form flat bannocks.

13

Cook each bannock one by one on a dry frying pan at medium heat for about 1.5 - 2 minutes on each side, covering the pan with a lid.

14

Once the bannock turns golden brown, flip it to the other side.

15

Brush the cooked bannocks with melted butter to make them softer.

16

Make a pile by stacking the bannocks on top of one another.
